Ingredients

  • Spaghetti 180 gr
  • Fresh sardines 150 gr
  • Fresh fennel 1 sprig
  • Raisins 30 g
  • Pine nuts 30 g
  • Stale bread 20 g
  • Saffron 1 sachet
  • 1/2 onion
  • 2 fillets of anchovies in oil
  • Pepper
  • Garlic 1 clove
  • Salt

Procedure

Crumble the bread and toast it in a pan with a drizzle of oil, a pinch of salt, and a clove of garlic.

Blanch the fennel, reserving the water to cook the spaghetti. Chop the fennel with a knife. Soak the raisins in water.

Sauté the chopped onion with the anchovies, add the saffron dissolved in a little hot water, and add the pine nuts and drained raisins.

Add the sardines and pepper, cook for 2 minutes.

Cook the spaghetti and sauté it with the sardine sauce, serve it sprinkled with a little crusty bread.
